WARM BACON DRESSING OVER GREEN BEANS AND SHIITAKE MUSHROOMS

Ingredients:
5 slices Hatfield Bacon
1 ½ lbs. green beans, trimmed
3 Tbsp. olive oil
1 pkg. (3.5 oz.) shiitake mushrooms, stems removed and sliced
2 shallots, chopped
1 tsp. minced garlic
2 Tbsp. white balsamic vinegar
1 ½ Tbsp. whole grain mustard
1 tsp. sugar
½ tsp. dry mustard
¼ cup olive oil
Salt and pepper to taste
Preparation:
Bring a large pot of salted water to a boil. Add green beans and cook, 5 to 8 minutes or tender-crisp. Drain well. Place in large bowl.
In medium saute’ pan over medium heat, in hot oil cook mushrooms, stirring frequently, 5 to 7minutes or until browned and tender. Place in bowl with green beans.
In medium skillet over medium-high heat, cook bacon until crisp. Remove to paper towels to drain.
