WARM BACON DRESSING OVER GREEN BEANS AND SHIITAKE MUSHROOMS

Ingredients:
- 5 slices Hatfield Bacon
- 1 ½ lbs. green beans, trimmed
- 3 Tbsp. olive oil
- 1 pkg. (3.5 oz.) shiitake mushrooms, stems removed and sliced
- 2 shallots, chopped
- 1 tsp. minced garlic
- 2 Tbsp. white balsamic vinegar
- 1 ½ Tbsp. whole grain mustard
- 1 tsp. sugar
- ½ tsp. dry mustard
- ¼ cup olive oil
- Salt and pepper to taste
Preparation:
- Bring a large pot of salted water to a boil. Add green beans and cook, 5 to 8 minutes or tender-crisp. Drain well. Place in large bowl.
- In medium saute’ pan over medium heat, in hot oil cook mushrooms, stirring frequently, 5 to 7minutes or until browned and tender. Place in bowl with green beans.
- In medium skillet over medium-high heat, cook bacon until crisp. Remove to paper towels to drain.
- Cool bacon then crumble into pieces.
