Veggie Fried Rice with Ham

Ingredients:
- 1 Hatfield Ham steak, diced into ½ “pieces
- 1 package of frozen or box of jasmine rice (cook according to package directions and cooled completely)
- 1 Tbsp. sesame oil
- 2 Tbsp. canola oil
- 3 large eggs, beaten (scramble in a separate pan. Let cool completely)
- 1 small onion, diced
- 1 tsp. garlic, minced
- 3 green onions, sliced thinly
- 1 package sliced button mushrooms
- ½ cup frozen corn
- ½ cup frozen peas and carrot mixture
- ¼ cup low-sodium soy
- ¼ tsp. crushed red pepper
Preparation:
In a large sauté pan, heat sesame and canola oil over medium high heat. Add onion, garlic and scallion. Sauté together for 2 minutes. Then add mushrooms, corn, pea carrot mixture, ham, soy and crushed red pepper. Cook for 5-8 minutes. Lastly, add rice and egg, stir until heated through. Serve hot!
