Tuscan Herb Pork Ragu Served Over Pasta

Ingredients:
- 1 Tuscan Herb Pork Tenderloin
- 3 Tbsp. garlic, minced
- 1 medium onion, diced
- 1 large red pepper, diced
- 1 Tbsp. extra virgin olive oil
- 1 can (28oz) crushed tomatoes
- 1 Tbsp. fresh basil, chopped
- Salt and fresh ground pepper, to taste
- Pasta (your favorite, cook according to package directions)
Preparation:
- Turn on your Pressure cooker (Instant Pot) to Sauté function.
- Add oil, garlic, onion and red pepper; cook for 3 minutes.
- Remove onion mixture, set aside.
- Add marinated tenderloin and cook until browned, 3 minutes on each side.
- Add onion mixture, tomatoes and fresh basil; close and lock lid.
- Set high pressure for 45 minutes.
- Allow time for pressure to build (approximately 10-15 minutes).
- After the 45 minutes; release the pressure 10-40 minutes.
- Remove lid and carefully shred pork with two forks.
- Serve over cooked pasta with salad and bread.
