3 cups shredded cheese (cheddar or pepper jack), set aside 1 cup for the top of the casserole.
Preparation:
Preheat oven to 375˚F. Spray a 9×13 baking dish with cooking spray and line with tater tots.
Cook sausage according to package directions. Sprinkle on top of tater tots.
In a large bowl, combine eggs, heavy cream, milk, salt, pepper, cayenne pepper and cheese, whisk together and pour over top of tater tots and sausage. Top with the additional 1 cup of shredded cheese.
Cover with aluminum foil, place in preheated oven and bake for 20 minutes. Remove foil and bake an additional 25 minutes until brown and bubbly. Cut into squares. Serve with fresh fruit or your favorite breakfast side.
