3 cups shredded cheese (cheddar, pepperjack), set aside 1 cup for the top of the casserole.
Preheat oven to 375°F. Spray a 9×13 baking dish with cooking spray and line with tater tots.
Place bacon on a cookie sheet and bake for 12-14 minutes until crispy. In a small saute pan over medium heat, add 1 tablespoon of bacon grease and the onions cook until translucent. Remove bacon from oven and chop. Once onions are cooked, place on top of the tater tots along with the chopped bacon.
In a large bowl, combine eggs, heavy cream, milk, salt, pepper, cayenne pepper and cheese, whisk together and pour over top of tater tots. Top with additional 1 cup of shredded cheese.
Cover with aluminum foil, place in preheated oven and bake for 20 minutes. Remove foil and bake for an additional 25 minutes until brown and bubbly. Cut into squares.
