SPINACH BITES WITH ITALIAN SAUSAGE

Ingredients:
- 1 pack Hatfield® Recipe Essentials® Hot or Sweet Italian Ground Sausage
- 1 (5 oz) bag chopped baby spinach, wilted and drained
- 2 cups of your favorite stuffing mix
- ½ cup parmesan cheese
- 2 tsp garlic powder
- ½ tsp black pepper
- ½ cup butter, melted
- 3 eggs, lightly beaten
Preparation:
- Preheat oven to 350°F.
- In a sauté pan over medium high heat, cook sausage, stirring and breaking up with a spoon. Cook until sausage is fully browned, about 10 minutes. Transfer to a large bowl and cool to room temperature.
- Once sausage is cooled, add wilted spinach, stuffing mix, cheese, garlic, pepper, butter, and eggs.
- Allow mixture to sit for 10 minutes so that eggs can soak in.
- Shape into walnut-sized balls and place on parchment-lined baking sheet.
- Bake for 20 minutes, or until browned and heated through. Transfer to a platter and serve.
