Savory Sausage, Apple and Cheddar Bread Pudding

Ingredients:
- 1 package Recipe Essentials Sweet Italian Ground Sausage
- 1 Tbsp. olive oil
- 2 cups Granny Smith apples, chopped
- 1 cup Vidalia onion, chopped
- 2 cups milk (1% or 2 %)
- 3 eggs, lightly beaten
- 1 cup sharp cheddar, shredded
- ΒΌ cup fresh parsley, chopped
- Salt and pepper, to taste
- 9 cups day old bread, cubed (sourdough, baguette, Italian bread β your choice)
- Cooking spray
Preparation:
- Preheat oven to 350Β°F. Prepare a 2-quart baking dish, spray with cooking spray.
- In a large saute pan over medium high heat, add oil and sausage to the pan and cook until no longer pink and browned (8-10 minutes). Remove sausage and set aside.
- Add the apples and onions, saute apples and onions until tender and slightly brown. Remove from heat and cool slightly.
- In a large bowl, combine milk, egg, Β½ cup cheddar cheese, parsley, season with salt and pepper. Combine together with a whisk. Stir in the sausage, apple and onion mixture. Add the bread cubes and gently combine. Let stand for 10 minutes.
- Spoon mixture into prepared baking dish, sprinkle remaining Β½ cup cheese. Place in preheated oven and bake for 45 minutes or until βpuddingβ is set and lightly browned.
