Sausage Stuffed Phyllo Cups

Ingredients:
- 32-ounces (2 packages) Hatfield® Recipe Essentials Hot Italian Fresh Ground Sausage
- 1 tablespoon olive oil
- 1 medium yellow onion, chopped
- 1 red bell pepper, chopped
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- ¼ teaspoon salt and black pepper
- 8-ounces cream cheese, room temperature
- 45 to 60 small phyllo cups
Preparation:
- Heat olive oil to medium heat in a large pan. Add onion and saute for 5 minutes.
- Stir in bell pepper and saute for 5 minutes more.
- Stir in garlic, Italian seasoning, salt, and pepper, and cook for 1 to 2 minutes.
- Increase heat to medium-high and add ground sausage. Cook for 7 to 10 minutes, breaking the meat into small pieces until browned and cooked.
- Preheat the oven to 350 degrees F. Spoon the cooked sausage mixture into each of the phyllo cups. Place onto a baking sheet, leaving space between each.
- Bake for 8 minutes and serve immediately.
