SAUSAGE, EGG, AND CHEESE MUFFINS

Ingredients:
- ½ lb Hatfield® Recipe Essentials® Country Ground Sausage
- 12 eggs
- ½ cup onion, chopped
- ½ tsp salt
- ¼ tsp pepper
- ½ cup cheddar cheese, shredded
Preparation:
- Preheat oven to 350°F.
- Lightly grease 12 muffin cups, or line with paper muffin liners.
- Heat a large skillet over medium high heat and stir in sausage. Cook until sausage is crumbly, evenly browned, and no longer pink, 10-20 minutes. Drain.
- Beat eggs in large bowl. Stir in onions, salt, and pepper. Mix sausage and cheddar cheese. Spoon mixture into prepared muffin cups, until they are about ⅓ full.
- Bake in preheated oven until knife inserted in the center comes out clean, 20-25 minutes.
- Tip: These muffins can be made frozen, and then reheated in the microwave, 1 minute 30 seconds.
