RED BEANS AND RICE WITH HAM AND RECIPE ESSENTIALS SAUSAGE

Ingredients:
- 1 lb. canned red kidney beans, rinsed
- 2 Tbsp. olive oil
- 1 large onion, diced
- 1 medium green bell pepper, diced
- 3 stalks celery, chopped
- 3 Tbsp. minced garlic
- 2 cup chicken stock
- ½ lb. Recipe Essentials Sweet Italian Sausage
- ½ lb. Recipe Essentials Hot Italian Sausage
- 2 ham steaks, diced
- Salt and pepper, to taste
- 1 cup brown or white rice
- 2 cups water and 1 tsp. salt
Preparation:
- In a large pot on medium high heat add the oil, once heated add the onion, pepper and celery (holy trinity) with garlic. Sauté for 5 minutes until vegetables become soft. Place in a bowl and set aside. Add the sweet and hot sausage cook for 8-12 minutes until it is no longer pink.
- The add the vegetables, beans, ham and chicken stock. While this is cooking in another pot make the rice.
- To assemble: place rice in the bowl then ladle bean mixture over the top.
