Ingredients:
  • 1 HATFIELD® Chili Verde Pork Tenderloin
  • 12oz chicken broth

For Cauliflower Rice:

  • 2 cups cauliflower rice (fresh or frozen)
  • 2 Tbsp. butter
  • Garlic powder and cumin, to taste
  • ½ cup fresh chopped cilantro
  • Juice of 1 lime, plus lime zest
  • Kosher salt

Garnishes: fresh avocado slices, diced tomato, diced red onion, Mexican shredded cheese, black beans, chopped cilantro, lime wedges.

Directions:
  • Place pork tenderloin in the slow cooker.
  • Pour broth over the pork.
  • Cook on low for 2 hours to 2 hours 15 minutes or until an internal temperature of 145°F has been reached. If using high temperature setting, cook for 1 hour 30 minutes to 1 hour 45 minutes or until an internal temperature of 145°F has been reached.
  • Once cooked, remove from slow cooker and slice and top on cauliflower rice.
  • Cook cauliflower rice according to package directions. When “rice” is finished cooking remove from heat, stir in butter, garlic powder, cumin and salt.
  • Stir in cilantro, lime, and zest.
  • Place cauliflower rice in a bowl, top with shredded chili verde pork, garnish with your favorite toppings.

NOTE: The shredded pork can be used for taco, quesadillas, nacho or WHATEVER YOU LIKE!
