1 pack Recipe Essentials Blended Ground Pork with Mushrooms
1 tsp. sesame oil
1 Tbsp. olive oil
8 oz. shiitake mushrooms, sliced
½ cup of scallions, sliced on the bias
Slaw mix – 1 bag
1 Tbsp. soy sauce
Crushed red pepper, to taste
Boston lettuce leaves or Romaine Lettuce
In a large sauté pan, heat 1 teaspoon of sesame oil over medium heat. Cook the pork breaking into bite-size piece, until brown and no longer pink; cooked through, about 5 to 7 minutes. Remove pork and set aside.
In the same pan, add the olive oil add the mushrooms and scallions. Cook until mushrooms are tender; add the slaw mix, cook until slightly wilted. Return the pork to the pan; stir in the soy and crushed red pepper. Serve with lettuce leaves and drizzle with hoisin sauce.
