MONTREAL LOIN FILET WITH CREAMY SPINACH BAKE

Ingredients:
- 1 Hatfield® Montreal Style Pork Loin Filet
- 2 (10 oz) boxes chopped frozen spinach, thawed and squeezed dry
- 1 Tbsp unsalted butter
- ¼ cup finely chopped white onion
- 2 tsp minced garlic
- 8 oz cream cheese, room temperature
- 1 tsp salt
- ¼ tsp red pepper flakes
- 2 cups parmesan croutons, lightly crushed
Preparation:
- Preheat oven to 375°F.
- Place pork loin in shallow roasting pan. Cover with foil and bake for 25 minutes. Remove from pan and rest for five minutes, then slice.
- Meanwhile, melt butter in a medium sauté pan over medium high heat.
- Add onion and cook until soft, about 3-5 minutes.
- Add garlic and cook for another 20 seconds.
- Add spinach, cream cheese, salt, red pepper, and half the parmesan croutons. Stir until well combined.
- Transfer to a large greased baking dish and top with the rest of the croutons.
- Bake until warm and golden, about 15 minutes, then serve with sliced pork loin.
