Ingredients:
- 3 lb Hatfield® Recipe Essentials® Ground Pork
- 1 (24 oz) jar marinara sauce
- 2 cups shredded Italian blend cheese
- 1½ cups plain bread crumbs
- 1 egg, lightly beaten
- ¼ cup sliced fresh basil
- 1 Tbsp Italian seasoning
- ½ tsp salt
- 2 roma tomatoes, thinly sliced
Preparation:
- Preheat oven to 400°F.
- Grease a nonstick muffin tin.
- In a large mixing bowl, combined pork, 1 cup marinara sauce, 1½ cups cheese, bread crumbs, egg, half the basil, Italian seasoning, and salt. Mix well.
- Portion mixture into muffin tin, using about 5 oz per muffin. Top each muffin with 1 Tbsp marinara, 1 slice of tomato, and ½ Tbsp cheese.
- Bake for 20-25 minutes, or until muffins are bubbling around the edges and cheese is golden brown.
- Meanwhile, warm remaining marinara sauce.
- Carefully remove muffins from pan, place on a serving platter, garnish with remaining basil, and serve with warm marinara sauce.
