In a large mixing bowl, combined pork, 1 cup marinara sauce, 1ยฝ cups cheese, bread crumbs, egg, half the basil, Italian seasoning, and salt. Mix well.
Portion mixture into muffin tin, using about 5 oz per muffin. Top each muffin with 1 Tbsp marinara, 1 slice of tomato, and ยฝ Tbsp cheese.
Bake for 20-25 minutes, or until muffins are bubbling around the edges and cheese is golden brown.
Meanwhile, warm remaining marinara sauce.
Carefully remove muffins from pan, place on a serving platter, garnish with remaining basil, and serve with warm marinara sauce.
