Maple Bacon Apple Crisp

• Preheat oven to 375°F.
• Add the apples to a large bowl. Combine the other ingredients in a medium bowl. Pour the cinnamon mix to the apples and let marinate while cooking the bacon.
• Place the bacon strips on a baking sheet and in a preheated oven. Cook 12-14 minutes until crispy. Remove from the oven and place on paper-towel lined plate. Pour off bacon grease keeping one tablespoon of grease. Chop bacon once cooled.
• In a 9×9 baking dish brush with bacon grease and cooking spray. Pour the apple mixture into the prepared baking dish.
• In a medium bowl, combine together the oats, flour, sugar to make the topping. Add the butter with a fork or pastry cutter until mixture is crumbly. Mix half of the bacon into the streusel mixture. Sprinkle the other half of the bacon over the apples.
• Place the streusel topping evenly over the apples and place in preheated oven.
• Bake for 40-45 minutes or until bubbling and apples are tender.
