ITALIAN WHITE BEAN AND SWEET ITALIAN SAUSAGE SOUP

Ingredients:
- 1 Tbsp. olive oil
- 1 medium Spanish onion, diced
- 1 Tbsp. minced garlic
- 6 cups chicken stock, unsalted
- 1 can diced tomatoes (28 oz.)
- 3 (15oz) cans cannellini beans, rinsed and drained
- 1 Tbsp. Italian seasoning
- 1 pack Recipe Essentials Sweet Italian or Hot Italian (your preference)
- 3 cups chopped kale (fresh or frozen. If frozen, defrost, drain and squeeze dry)
- ½ cup shredded parmesan
- Salt and pepper, to taste
- Crushed red pepper, to taste
Preparation:
- Turn on your instant pot to Sauté setting. Once hot add olive oil, add onions sauté until translucent about 3-4 minutes, then add garlic sauté for 1 minute. Next add Recipe Essentials sausage and cooking until begins to brown 4-6 minutes.
- Then, stir in chicken stock, tomatoes, beans, Italian seasoning, salt and pepper. Cover and secure lid. Make sure the valve is set to sealing. Set to pressure cook for 9 minutes. Let sit after cooking for 5 minutes and set the valve to venting. Remove lid.
- Stir in the kale (if fresh this will begin to wilt down).
- Add a pinch of crushed red pepper and taste. Add salt and additional pepper if needed.
- Ladle into bowls and serve with warm Italian bread and salad.
