Chorizo Tacos

Ingredients:
- 1 lb Hatfield Recipe Essentials Chorizo Ground Sausage
- 2 tsp vegetable oil
- 1 large white onion, finely diced
- 1 poblano pepper, finely diced
- 1 chipotle pepper in Adobo sauce, minced
- ¼ cup cilantro, chopped
- 8 oz pkg sour cream
- Your favorite salsa
- Queso fresco or Mexican shredded cheese
- Avocado, sliced
- Corn tortillas, warm
Preparation:
- Heat oil in a skillet over medium high heat.
- Add half the onions and all the poblano pepper and cook, stirring, until softened and start to add color, about 6-8 minutes.
- Add sausage and cook, stirring and breaking up with a spoon. Cook until sausage is fully browned, about 10 minutes. Stir in chipotle pepper and remove from heat.
- Transfer chorizo to a warm bowl. Add remaining onion and fresh cilantro.
- Serve immediately with tortillas, cilantro, sour cream, cheese, and avocado.
