Holiday Stuffed Pork Loin

• Preheat oven to 375°F. Line a roasting pan or sheet with aluminum foil and spray with nonstick cooking spray.
• In a large saute pan over medium-low heat, add 1 tablespoon of butter. Add onions, salt and pepper to taste, stir. Continue to stir as your cooking the onions until they begin to caramelize about 25 minutes. Stir in the chopped sage. Remove onion mixture and transfer to a bowl.
• In the same pan, add the other tablespoon of butter, turn up the heat to medium. Stir in spinach and cook until it begins to wilt, stirring occasionally. Stir in minced garlic, cook about 30 seconds.
