HAM AND CHEESE CAULIFLOWER FRITTERS

Ingredients:
- 1 package frozen cauliflower rice
- 2 tsp. olive oil
- 3 large eggs
- 2 cups shredded cheddar cheese
- 11⁄4 cups Hatfield® Traditional Dinner Ham, finely diced
- 3 tablespoons coconut flour
- 1 teaspoon mustard powder
- Salt and pepper, to taste
- Olive oil
- 1 teaspoon minced garlic
Preparation:
- In a sauté pan with 2 teaspoons olive oil, sauté cauliflower rice; cook for 5-7 minutes with lid on. Drain, and in a medium bowl, mash with a fork or potato masher, pressing as much liquid out as possible.
- Transfer mash to a large bowl; add eggs, cheese, ham, coconut flour, mustard, salt and pepper. Mix well to combine.
- In a large nonstick sauté pan over medium heat, add oil. Using a tablespoon, drop mixture into hot pan and form patties. Do not make larger than 3 inches in diameter. Cook for 3-5 minutes, until browned on the bottom, flip carefully and cook another 3-5 minutes. Remove and place on paper towel–lined rack.
- Serve hot.
A TIP FROM OUR CHEF
Fresh Cauliflower rice can be used as well. Make a basil aioli to accompany the fritters: In a small bowl, combine 1⁄2 cup mayonnaise, 1⁄4 cup fresh basil, 1⁄4 tsp. garlic; mix well. Garnish suggestions: diced red pepper, chopped scallion, fresh chopped basil.
