GROUND PORK AND SWEET POTATO CHILI

Ingredients:
- 1 Tbsp. olive oil
- 1 onion, diced
- 2 Tbsp. garlic, minced
- 1 ½ lbs. Recipe Essentials Blended Mild Taco Ground Pork with Mushrooms
- 1 large sweet potato, cleaned, peeled and diced into bite-size pieces
- 1 can black beans
- 1 large can crushed tomatoes (28oz)
- 1 Tbsp. Worcestershire sauce
- 1 tsp. cumin
- Salt and pepper, to taste
Preparation:
- Set the Instant Pot to SAUTE setting. Add the olive oil and onion to the pot. Sauté until the onions are translucent and tender.
- Add the minced garlic and blended pork. Stir frequently until pork browns.
- Add the sweet potato, crushed tomato, black beans, Worcestershire sauce and cumin. Stir until combined.
- Set Instant Pot to 10 minutes HIGH pressure. Allow to release the pressure naturally and carefully release any additional pressure.
- Serve in bowls and top with your favorite topping and tortilla chips.
