GROUND PORK AND QUINOA FRIED RICE BOWL

Ingredients:
- 1 pack Recipe Essentials Blended Ground Pork with Mushrooms
- 2 eggs
- 2 tsp. sesame oil plus 1 Tablespoons Olive oil
- 1 c. frozen peas & carrots
- 2 cups assorted vegetables cut into small pieces, broccoli, asparagus, snow peas, red pepper, cabbage
- 4 scallions, chopped
- 2 c. prepared quinoa (cook according to package directions) or Cauliflower Rice
- 3 Tbsp. low-sodium soy sauce
- Pinch of red pepper flakes
- 1 tsp. garlic, minced
- 1 tsp. cilantro paste
- Salt and pepper, to taste
Preparation:
- Whisk eggs in a small bowl, set aside.
- Season pork with salt and pepper
- In a large saute pan, heat 1 teaspoon of sesame oil over medium heat. Cook the pork breaking into bite-size piece, until brown and no longer pink; cooked through, about 5 to 7 minutes. Set aside.
- In the same saute pan, add one tablespoon of olive oil over medium heat. Add the frozen and fresh vegetables, cilantro, garlic and green onion. Stir-fry until tender, about 2-3 minutes.
- Push the vegetables aside; add the eggs and the additional teaspoon of sesame oil.
- Scramble the eggs.
- Add the ground pork, quinoa, soy and red pepper flake.
- Serve in a bowl.
