Grilled Garlic Mustard Loin Filet With Fresh Veggie Salad

Ingredients:
- 1 Hatfield® Garlic Mustard Pork Loin Filet
For Salad:
- 12 cups raw crunchy vegetables, shaved (cauliflower, fennel, radishes, beets – red or golden)
- 1 cup fresh basil or mint – torn
- 2 lemons (zested and juiced)
- ¼ cup extra virgin olive oil
- 2 Tbsp. White Balsamic Vinegar
- Kosher salt, fresh ground pepper – to taste
Preparation:
- Preheat grill for 10 minutes to medium heat
- Place loin filet on grill and close the lid.
- Grill on one side 10-15 minutes. Rotate loin and grill for another 10-15 minutes until internal temperature reaches 145°F (at thickest part) or juices run clear.
- Remove from grill.
- Let sit for 3 minutes before slicing.
- Serve sliced pork over the salad.
