Farm-style Crustless Quiche Cups with Breakfast Ham

Ingredients:
- 6 oz. Hatfield Breakfast Ham, diced
- 12 eggs
- ¼ cup milk
- 1 cup shredded cheese (your choice)
- 1 Tbsp. olive oil
- 1 cup vegetables (mushrooms, peppers, onions, broccoli), diced and sautéed
- Salt and pepper, to taste
Preparation:
- Preheat oven to 375˚F.
- In a skillet add 1 tablespoon of oil to medium high heat, sauté the vegetables until tender.
- In a mixing bowl, whisk together eggs, milk, salt and pepper. Set aside.
- Using a regular muffin pan (12 count) spray with cooking spray. Add teaspoon of vegetable to each muffin cup, Breakfast Ham and pour egg mixture into each muffin cup.
- Place in preheated oven and bake for 12-14 minutes.
- Remove and serve with fresh fruit, biscuits or english muffins.
