Fall Oatmeal Craisin Cookies with Bacon

• For the bacon: follow cooking instructions on package. Once cooked and crispy, place on paper towels to drain excess grease. Once cooled completely, place in food processor and pulse until bite size. If you don’t have a food processor, chop on a cutting board until bite size pieces.
• Preheat oven to 375°F.
• Using a stand mixer, beat butter and sugar together until light and fluffy. Add eggs, mixing well. Combine oats, flour, baking soda and salt in a separate bowl. Add flour mixture to the butter mixture, in several additions, mix well after each addition. Stir in ¾ cup chopped bacon along with the craisins and white chocolate chips.
• Drop teaspoons full of cookie dough onto ungreased cookie sheet. Bake for 10-12 minutes until golden brown.
