½ cup shredded carrots (store bought or grate 1 large carrot)
1 large red pepper, julienned
6 cups cauliflower rice or cooked brown rice (cook according to package directions)
3 scallions, sliced
Preparation:
In a large saute pan, heat 1 Tbsp. of olive oil over medium high heat.
Add the Sesame Soy Ginger Ground Sausage. While cooking, break apart the ground sausage using a utensil, cook until brown, and no longer pink (10-12 minutes). Once cooked, remove from pan and set aside.
In the same pan, add 1 Tbsp. olive oil and 1 Tbsp. sesame oil, garlic, ginger and onion. Saute until onions become translucent.
Add cooked ground sausage, cabbage, carrots, red pepper and soy sauce. Saute for another five minutes. Taste and add salt or pepper, if needed.
To prepare cauliflower rice: in a large pan, add 1 Tbsp. olive oil and 1 Tbsp. sesame oil. Cook for 5-7 minutes until “rice” becomes tender.
To assemble: in a bowl, add the cauliflower rice, top with the ground sausage vegetable mixture. Garnish with scallion.
