Ingredients:
- 1 package Recipe Essentials Sesame Soy Ginger Ground Sausage
- 6 cups cauliflower rice or cooked rice
- 2 Tbsp. sesame oil
- 3 Tbsp. olive oil
- 2 Tbsp. garlic, minced
- 1 tsp. fresh ginger, minced
- 2 Tbsp. low-sodium soy sauce
- 1 medium onion, julienned
- 1 bag shredded cabbage (coleslaw mix)
- ½ cup shredded carrots (store bought or grate 1 large carrot)
- 1 large red pepper, julienned
- 3 scallions, sliced
Preparation:
- In a large saute pan, heat 1 Tbsp. of olive oil over medium high heat.
- Add the Sesame Soy Ginger Ground Sausage. While cooking, break apart the ground sausage using a utensil, cook until brown, and no longer pink (10-12 minutes). Once cooked, remove from pan and set aside.
- In the same pan, add 1 Tbsp. olive oil and 1 Tbsp. sesame oil, garlic, ginger and onion. Saute until onions become translucent.
- Add cooked ground sausage, cabbage, carrots, red pepper and soy sauce. Saute for another five minutes. Taste and add salt or pepper, if needed.
- To prepare cauliflower rice: in a large pan, add 1 Tbsp. olive oil and 1 Tbsp. sesame oil. Cook for 5-7 minutes until “rice” becomes tender.
- To assemble: in a bowl, add the cauliflower rice, top with the ground sausage vegetable mixture. Garnish with scallion.
