Ingredients: ; 1 package Recipe Essentials Sesame Soy Ginger Ground Sausage; 6 cups cauliflower rice or cooked rice; 1 medium onion, julienned; 1 bag shredded cabbage (coleslaw mix); ½ cup carrots, shredded; 1 large red pepper, julienned; 3 scallions, sliced; 2 Tbsp. sesame oil; 3 Tbsp. olive oil; 2 Tbsp. garlic, minced; 1 tsp. fresh ginger, minced; 2 Tbsp. low-sodium soy sauce; ;

Pork Eggroll in a Bowl

Ingredients:

1 package Recipe Essentials Sesame Soy Ginger Ground Sausage
6 cups cauliflower rice or cooked rice
1 medium onion, julienned
1 bag shredded cabbage (coleslaw mix)
½ cup carrots, shredded
1 large red pepper, julienned
3 scallions, sliced
2 Tbsp. sesame oil
3 Tbsp. olive oil
2 Tbsp. garlic, minced
1 tsp. fresh ginger, minced
2 Tbsp. low-sodium soy sauce

Preparation:

In a large saute pan, heat 1 Tbsp. of olive oil over medium high heat.
Add the Sesame Soy Ginger Ground Sausage. While cooking, break apart the ground sausage using a utensil, cook until brown, and no longer pink (10-12 minutes). Once cooked, remove from pan and set aside.
In the same pan, add 1 Tbsp. olive oil and 1 Tbsp. sesame oil, garlic, ginger and onion. Saute until onions become translucent.
Add cooked ground sausage, cabbage, carrots, red pepper and soy sauce. Saute for another five minutes. Taste and add salt or pepper, if needed.
To prepare cauliflower rice: in a large pan, add 1 Tbsp. olive oil and 1 Tbsp. sesame oil. Cook for 5-7 minutes until “rice” becomes tender.
To assemble: in a bowl, add the cauliflower rice, top with the ground sausage vegetable mixture. Garnish with scallion.
