Ingredients: ; 1 Hatfield Cracked Pepper Thick Cut Bacon; 2 eggs; ¼ cup heavy cream; 1/3 cup grated parmesan; 1 tsp. freshly chopped parsley; ¼ tsp. kosher salt; ½ tsp. red pepper flakes; 4oz. shiitake mushrooms, sliced; 4 oz. chopped Vidalia onion; 8 oz. pasta (cooked according to package directions);

Creamy Pasta Carbonara

Ingredients:

1 Hatfield Cracked Pepper Thick Cut Bacon
2 eggs
¼ cup heavy cream
1/3 cup grated parmesan
1 tsp. freshly chopped parsley
¼ tsp. kosher salt
½ tsp. red pepper flakes
4oz. shiitake mushrooms, sliced
4 oz. chopped Vidalia onion
8 oz. pasta (cooked according to package directions)

Preparation:

In a medium bowl, combine the eggs, heavy cream, grated parmesan, parsley, salt and red pepper flakes.
Cook bacon until crisp, then crumble and set aside. Reserve 1 tablespoon of bacon grease.
Using 1 tablespoon of grease, heat over medium high heat, add the mushrooms and onions until onions are translucent and mushrooms are soft.
Drain pasta, add the onion mushroom mixture. Pour the cream mixture over the pasta, place on stovetop, low heat and stir for 1-2 minutes.
Stir in crumbled bacon and serve with additional parmesan cheese
