Creamy Pasta Carbonara

Ingredients:
- 1 Hatfield Cracked Pepper Thick Cut Bacon
- 2 eggs
- ΒΌ cup heavy cream
- 1/3 cup grated parmesan
- 1 tsp. freshly chopped parsley
- ΒΌ tsp. kosher salt
- Β½ tsp. red pepper flakes
- 4oz. shiitake mushrooms, sliced
- 4 oz. chopped Vidalia onion
- 8 oz. pasta (cooked according to package directions)
Preparation:
- In a medium bowl, combine the eggs, heavy cream, grated parmesan, parsley, salt and red pepper flakes.
- Cook bacon until crisp, then crumble and set aside. Reserve 1 tablespoon of bacon grease.
- Using 1 tablespoon of grease, heat over medium high heat, add the mushrooms and onions until onions are translucent and mushrooms are soft.
- Drain pasta, add the onion mushroom mixture. Pour the cream mixture over the pasta, place on stovetop, low heat and stir for 1-2 minutes.
- Stir in crumbled bacon and serve with additional parmesan cheese
