Chorizo Pinwheels

• Heat oven to 400 degrees
• Prep corn and chop cilantro before blending tomatoes
• Cook chorizo ground sausage until golden brown and remove from heat.
• In a separate pan, roast and char corn with a little oil, salt, and pepper.
• Dust a clean surface and rolling pin before rolling pizza dough to about 1/4inch thickness
• Spread tomatoes and layer with ground sausage, poblano pepper, corn, Queso fresco, lime zest and cilantro.
• Cut 7-8 strips and roll into pinwheel
• Place pinwheels in a nonstick muffin tray and bake for 20-25 minutes.
• When done, plate with guacamole, sour cream, and salsa.
