Carnitas Street Tacos

Carnitas Street Tacos

Ingredients:

1 Hatfield Carnitas Pork Roast
8-12 flour or corn tortillas (street taco size)
4 oz. queso fresco or cojita cheese, crumbled
½ cup sour cream
2 Tbsp. taco sauce

Street Corn Salad Ingredients:

2 cups Corn, roasted (can purchase frozen roasted corn, thaw and heat)
1 Tbsp. minced garlic
¼ cup mayonnaise
2 Tbsp. fresh lime juice
¼ tsp. chili powder
1 Tbsp. fresh chopped cilantro
1 red bell pepper, chopped finely
2 strips Hatfield Bacon, cooked and crumbled
2 green onions, sliced thinly
Salt and pepper, to taste

Preparation:

Remove roast from packaging. Place pork in slow-cooker (following cooking instructions on packaging) and cook on high for 3-4 hours.
Once pork is cooked, remove from slow cooker and shred using 2 forks. Discard any large pieces of fat.
In a small bowl, combine sour cream and taco sauce.

To make street corn salad:

In a medium bowl, combine all ingredients.

To assemble street tacos:

Heat tortillas for 30 seconds in the microwave.
Place pork on tortilla, top with cheese and crema. Serve with Corn Salad.
