Ingredients: ; 2 pounds Hatfield® Recipe Essentials™ Chorizo Ground Sausage; 1 can chipotle chilies in adobo sauce; 2 Tbsp Olive oil; 2 bunches of scallion, chopped; 1 ½ cups onion, chopped; 1 cup green pepper, chopped; 1 ½ cups red pepper, chopped; 2 Tbsp minced garlic; 2 Tbsp chili powder; 1 Tbsp ground cumin; Juice of 1 lime; 2 tsp oregano; 3 cans black beans, drained and rinsed; 3 cans diced tomatoes, undrained; ¾ tsp salt; ½ tsp black pepper; Garnish: Sour Cream and Tortilla Chips;

Chorizo Chili

Ingredients:

2 pounds Hatfield® Recipe Essentials™ Chorizo Ground Sausage
1 can chipotle chilies in adobo sauce
2 Tbsp Olive oil
2 bunches of scallion, chopped
1 ½ cups onion, chopped
1 cup green pepper, chopped
1 ½ cups red pepper, chopped
2 Tbsp minced garlic
2 Tbsp chili powder
1 Tbsp ground cumin
Juice of 1 lime
2 tsp oregano
3 cans black beans, drained and rinsed
3 cans diced tomatoes, undrained
¾ tsp salt
½ tsp black pepper
Garnish: Sour Cream and Tortilla Chips

Preparation:

Remove 2 chilies from the can; finely chop.
Heat a large pot on the stove medium-high heat, add oil, chilies, onions, peppers and garlic sauté 5 minutes until tender.
Add chorizo, chili powder and next 5 ingredients, stirring to combine.
Bring to a boil, reduce heat and simmer for 35 minutes, occasionally stirring. Remove from heat add salt and pepper.
Ladle into bowls, top with sour cream and scallion, serve with tortilla chips.
