OVEN

  • Preheat oven to 450°F.
  • Using a sharp knife score the fat in a diamond pattern.
  • Season with salt and pepper or your favorite rub.
  • Place pork fat side up in your roasting pan with 1 cup of water.
  • Roast for 45-50 minutes until fat has rendered.
  • Remove pan from oven and reduce oven temperature to 350°F.
  • Cover pan completely with aluminum foil or a lid.
  • Cook meat until tender for 4 hours to an internal temperature of 195-200°F. (approximately 30-33 minutes per pound)
