Oven
- Preheat oven to 450°F.
- Using a sharp knife score the fat in a diamond pattern.
- Season with salt and pepper or your favorite rub.
- Place pork fat side up in your roasting pan with 1 cup of water.
- Roast for 45-50 minutes until fat has rendered.
- Remove pan from oven and reduce oven temperature to 350°F.
- Cover pan completely with aluminum foil or a lid.
- Cook meat until tender for 4 hours to an internal temperature of 195-200°F. (approximately 30-33 minutes per pound)
