  • 1 lb. Hatfield® Bacon (chopped).
  • 1 large white onion (chopped).
  • 1 tsp. fresh garlic (minced).
  • 1 can fire-roasted diced tomatoes.
  • 5 vine-ripened tomatoes (medium diced).
  • ¾ cup light brown sugar.
  • ¼ cup apple cider vinegar.
  • Salt and black pepper (to taste).

Steps to make your tomato jam and bacon

  • Step 1: In a large saute pan over medium high heat, add bacon and cook until almost crispy (approximately 8 minutes). After this, drain the bacon grease and set your almost-crispy bacon aside.
  • Step 2: In the same pan, add 2 tablespoons of bacon fat, onions, garlic, salt and black pepper.
  • Step 3: Cook until the onions are translucent. Add the canned tomatoes and fresh tomatoes, stir and let simmer for 10 minutes.
  • Step 4: Then, add brown sugar and vinegar. Stir until incorporated.
  • Step 5: Lastly, add the bacon and stir until combined and the mixture begins to bubble. Turn medium heat down to a low temperature and let simmer for 35-40 minutes until very little liquid remains.
  • Step 6: Remove from heat and place in a serving bowl. You can serve with pork tenderloin, on a charcuterie board with cheese or for breakfast on an omelet — the options are practically endless!
